Instructions:

For the guardian angel tzatziki, peel the cucumber and cut into small cubes, then mix with the spice flower mixture, yogurt and garlic clove and season with salt.

For the salmon loaf, crumble the slice of white bread without the crust. Cut the salmon fillet into small cubes. Mix the salmon pieces, crumbled white bread, onion, dill, egg and cumin, divide the mixture, form 2 loaves and leave them in the refrigerator for 1 hour.

Cut the fennel bulb into fine slices, heat olive oil in a pan and fry the fennel slices well on both sides and drizzle with a few drops of lemon juice at the end.

Fry the salmon loaves in the same way in a pan with hot olive oil on both sides. About 3-5 minutes per side.

Slice the pitta roll and toast it in the oven for a short time. Then place the following on it: lettuce leaf, salmon loaf, guardian angel tzatziki, fried fennel.
