For the pork roast like grandma did, rub the pork carcass vigorously all around with salt, caraway seeds and garlic (we take 2-3 cloves of garlic). In a frying pan, brown the chopped out backbone in oil.
Put the loin with the outside down on the backbone and put it into the preheated oven (approx. 200°C degrees). From time to time baste with water or gravy cubes mixed with water. We prefer to use water mixed with gravy cubes, caraway seeds and a little garlic and pour it over regularly.
After about 1 hour, turn the roast over and let it roast for another 1 hour. At the end, maybe 15 minutes briefly turn on the grill setting if you want a crispy crust for the roast pork like grandma.
