For the game-style roast pork, rub the roast pork with garlic, salt, pepper and the crushed juniper berries and place in a deep dish.
In a hand mixer, grind the tomatoes, carrot and spices for the marinade, mix with the buttermilk and pour over the meat.
The meat should lie in this pickle for three days, turning the meat daily.
Then remove the meat, dry it and dust it with flour.
In a Reindl heat the butter fat, fry the meat together with the onion and the carrot all around and add the tomato.
Extinguish with beef broth and roast for about 1 1/2 hours either covered in a saucepan or in the oven at 200 °C.
Before serving, season the sauce with salt and pepper and refine with sour cream.
