For the rice pudding casserole in a jar, place the rice with the coconut milk and lemon zest in an unperforated cooking bowl and steam in the Miele steamer at universal cooking temperature 100°C for 25 minutes.

In the meantime, cream the butter with the yolks and agave syrup.

Add the slightly overcooled rice to the butter and finally fold in the stiffly beaten snow from 4 eggs.
