For the chicken curry, wash the chicken breast, pat dry and cut into bite-sized pieces. Wash the peppers, remove the stalk and seeds and cut into strips.

Clean and chop the mushrooms. Heat the coconut oil in a wok or large frying pan, add the chopped onions and garlic and sauté until translucent.

Add the meat pieces and sauté, turning, for about 3 minutes on all sides. Add the bell bell pepper, mushrooms and curry paste and mix well.

Add the hot soup and soy sauce. Bring to a boil once and then reduce heat to thicken in 4-5 minutes. In the meantime, skin the tomatoes and cut into cubes.

Then add and simmer for another 2 minutes. The curry is best served with rice.
