Gut and clean the fish(es) and score them crosswise on both sides. Stuff the cilantro into the fish. Mix honey and juice of one lemon and rub the fish extensively with it. Refrigerate for about 2-3 hours, turning the fish more frequently in the marinade to the other side. Mix the sauce ingredients. Sear the fish briefly on both sides. Add the shallot(s) and sauce to the fish form and cook at the lowest temperature (the sauce should barely make) for half an hour with the lid closed. From time to time spoon a little sauce over the fish.
