For the punch parfait with port wine prunes, the day before bring red wine and port wine to a boil with the spices, sugar, zest and juice of the orange. Put in the prunes and remove the saucepan from the kitchen stove. Marinate the plums in it for at least 24 hours.

For the semifreddo, boil down tea, orange juice, red wine, juice of one lemon and sugar to 1/4. Finally, steep the thinly peeled orange and lemon peels in it for ten minutes and drain. Mix the liquid with the rum, add the egg and egg yolks and beat in a wassling over a bain-marie to a creamy consistency. Now put the farthing in iced water and chill the mixture.
