For the asparagus salad, peel the asparagus and cut crosswise into small pieces. Cook in boiling water for a few minutes until asparagus is tender but still crisp. Core apple and cut into wedges.
Stir vinegar, soy sauce, pepper and oil into a marinade and let the asparagus and apple slices marinate very briefly.
Arrange 2 portions of the asparagus salad on the lettuce leaves. Dice the feta cheese, place it on the salad and serve the asparagus salad sprinkled with freshly cut cress.
