For the pumpkin vegetables with bacon, start by peeling the pumpkin, remove the seeds and cut into bite-sized pieces.
Then blanch, skin and coarsely dice the tomatoes. Wash and quarter the mushrooms. Peel the ginger and shallots, chop or grate finely and also chop the bacon.
Now melt the butter in a large pot and fry the bacon until crispy. Then add the shallots and sauté until translucent. Then also add the pumpkin and steam the vegetables for about 10 minutes over medium heat with the lid closed.
After cooking time also add tomatoes, mushrooms and ginger to the pumpkin vegetables with bacon and season with salt and pepper. Now pour whipped cream and let stew for another 5 minutes with the lid closed.
