For the puff pastry cinnamon sticks, preheat the oven to about 200 °C.
Cut the puff pastry lengthwise.
Melt the butter and mix well with the sugar. Brush one half of the puff pastry with the butter, place the second half on top and press down lightly. Now cut strips about 1.5-2 cm wide and shape into pretzels if desired.
Whisk the egg yolk and brush the sticks/pretzels with it. Then bake for about 10-15 minutes until golden brown.
Boil the apricot jam, lemon juice, cinnamon and possibly almonds and brush the pretzels with it. Sprinkle the puff pastry cinnamon sticks with hail or granulated sugar.
