For the potato dumplings with bacon, boil the potatoes until soft, peel and press through a potato ricer. Let cool and then knead well on a pasta board with egg, butter, semolina, potato starch, flour, salt and a little nutmeg.
Leave to rest in the refrigerator for an hour, then form small dumplings and layer in a baking dish. Cut the bacon into cubes and sprinkle over the dumplings. Bake the potato dumplings with bacon at 190 degrees.
