For the blueberry pancakes, mix the dry ingredients. Mix yogurt with milk in measuring cup, then add to dry ingredients. Add the honey. Separate the egg. Mix the yolks directly to the mixture, beat the egg whites, then gently fold in.
Now add most of the blueberries and save a few for decorating. In a non-stick pan, fry about 4 tablespoons of batter at a time with a few drops of oil over medium-low heat, about 4 -5 minutes. This way they will be well done on the inside.
