For the peanut pancakes with ham, beat eggs in a bowl and whisk with the milk and oil. Finely chop the spring onions and parsley and coarsely chop the peanuts. Finely chop the turkey ham. Mix flour with baking powder and stir into the eggs together with the puree powder. Add ham, cheese, peanuts, green onions and parsley. Season with salt, pepper and nutmeg. Allow to brown briefly.

Heat some oil in a pan and put the mixture in the form of small pancakes. To do this, either use wet hands to form small patties from the mixture, place them on a kitchen board dusted with flour and turn them over, or use two spoons moistened with water to place doughnuts in the hot oil and flatten them slightly. Fry the fritters until golden brown, turn them over and fry the second side until brown. Lift out and drain on paper towels.

Pack the peanut pancakes with ham cooled into a fresh-keeping tin and enjoy.
