Later, in the main season for local outdoor vegetables and the first potatoes, you can draw from the full: the vegetables are inexpensive and taste just right. The abundant supply at the market or in the health food store will inspire you to try out new recipes in which vegetables play the leading role.

Preheat the oven to 200 °C (gas mark 3). Clean and rinse the carrots and potatoes and remove the skin. Remove the wilted leaves and roots from the spring onions. In a large gratin dish, melt the butter. Pile in the vegetables except the onions. Mix the clear soup with the honey and pour over the vegetables, place in the hot oven. Bake for 60 minutes, pouring the stock every 10 minutes as it reduces. After half an hour put the onions and pine nuts on top, continue to baste well with stock.

If the liquid boils down almost completely, add more water, otherwise the vegetables will be too salty.

The vegetables also taste lukewarm or cooled. Since butter becomes solid once again during cooling, use nut oil or grape seed oil instead of butter in this case. Serve it as an entrée or with baguette and feta cheese as a main meal. Well packaged, it is also a hit for picnics.
