Remove the peel from the vegetable onions, cut them in half lengthwise, cut them diagonally into thin strips and sauté them in butter in a frying pan with a large diameter and high rim or in a saucepan corresponding to the onions, without letting them brown, season with salt, pepper, and half of the caraway, cut the star anise in half each and mix in the four pieces. Pour half of the vermouth, then saute the onions without a lid at low temperature until soft, without browning them, so keep stirring. When the liquid has evaporated, pour the rest and continue as before. all together it takes about 30 to 40 min, then the onions are cooked, but hopefully not too soft yet.

Season the vegetables with a little bit of lemon juice, remove the star anise, season with the rest of the caraway seeds, repeat the process for about

stew for about 5 minutes and bring to the table. It goes very well with pork and liver roasted for a short time.
