In Korea, beef is preferred to pork and poultry. Mutton is unknown.

The beef is cut into paper-thin slices and these are again cut into small bites. Sometimes these slices are pounded extraordinarily thin. The meat is then kneaded well with the described marinade. It is left to marinate for 2-4 hours to make it tender and spicy.
