Prepare beurre blanc according to the basic recipe. Wash herbs, pluck leaves and chop coarsely. Mix into the sauce and strain. This sauce is not very stable in color and tends to turn grayish, especially when heated too much and for too long. So always prepare it as fresh as possible. Foam with a blender or magic wand before serving.
