For quick tiramisu with sponge cake and berries, mix well mascarpone with whipped cream, powdered sugar and the pulp of a vanilla pod.

Heat espresso with sugar – the espresso must not boil, otherwise it will become bitter! Let the espresso-sugar mixture simmer for about 20 minutes, then add the liqueur and refrigerate.

Mix the berries with the powdered sugar.

Spread some mascarpone on a plate, put 3 biscuits on top and spread mascarpone on top again. Put another layer of biscuits, spread with mascarpone and arrange the berries on top.

Garnish the quick tiramisu with biscuits and berries with the coffee syrup, sprinkle with cocoa powder to taste and enjoy immediately.
