Marinated Trout with Rooibos and Lemon

Instructions:

For the marinated trout with rooibos and lemon, first pour 200 ml of boiling water over one tea bag for the marinade and let it steep for 10 minutes. Mix the contents of the remaining 3 tea bags with the lukewarm tea, lemon juice, sugar and salt.

Debone and skin the trout fillets. Place in the rooibos marinade and let marinate in the refrigerator for 4 hours.

Cut the chili pepper into very fine strips. Peel the pumpkin flesh into thin strips with a peeler, mix with ¼ tsp salt and let sit for 10 minutes. Then mix with maple syrup, vinegar, olive oil, sesame seeds, chili threads and parsley. Season to taste with salt and pepper.

Spread the mayonnaise on plates, cut the fish in half and place on top. Garnish the marinated trout with rooibos and lemon with the pumpkin and serve with white bread.
