Score kumquats crosswise at top, layer in heatproof, sterilized jars.

Combine sugar and water in a small cast-iron saucepan. bring to a boil and make one minute. Then fold in the liqueur.

Pour the syrup into the jars over the kumquats. At the same time, make a rim of 1 cm. Put the lid on, but nihct tightly.

Layer a few layers of newspaper on the bottom of a large cast iron pot. Place jars on top and pour hot water to the top of the jars.

Bring the water to a gentle simmer. Reduce temperature, simmer gently for 20 minutes until kumquats turn a clear color.

Carefully remove the jars. Close lids tightly on the spot and cool completely.

Next, label and date.

Keep in a cool, dark place for 2 months. Turn to the other side every few weeks.
