For the Italo sandwiches, first bake the rolls in the oven. When they are ready, let them cool a bit so they are easier to cut through.

Cut the rolls lengthwise and spread each bottom half with a little mustard. Now place 2 sheets of raw ham on each side. Wash the leek a bit and cut it into thin rings.

Spread the rings on the raw ham. Using a cheese slicer (or a vegetable peeler), shave thin pieces of Parmesan and place them on top of the leeks.

Drizzle each sandwich with a few drops of olive oil and fold over the other side of the bread. Serve the Italo sandwiches still lukewarm.
