Salt and pepper chicken drumsticks and brush all around with apricot jam.
Peel and halve shallots, peel and crush garlic cloves. Quarter the lemons. Cut apricots in half and pit.
Spread all ingredients in a shallow baking dish and drizzle with sunflower oil.
Roast in a preheated oven at 160 °C (hot air) for about 1 hour until crispy. If necessary, top up with a little stock.
