For the heather sand, quickly knead the butter, flour, sugar and flavoring ingredients into a shortcrust pastry. Divide mass into 4 parts and roll into 2-3 cm thick and about 25 cm long bars. Coat with egg white, roll in granulated sugar or fine hail sugar and let rest for about 30 minutes. Cut the sticks into slices about 5 mm thick and place on a baking sheet lined with baking parchment. With a wooden spoon previously dipped in flour, make a small depression and fill it with jam as desired. Bake in the preheated oven at 170 °C for about 15 minutes. After baking, fill again with a little jam.
