In a large pot, bring salted water to a boil. Add the croissants and cook until al dente.
Meanwhile, mince or very finely dice the ham with a food processor.
Finely dice the onion. Sauté the onion in hot oil in a pan and then add the ham mixture/dice. Do not let it get too dark.
Pour in whipping cream. Chop the parsley and add it as well. Add the drained croissants to the ham sauce and season with salt and pepper.
