Stir buter with flour to a roux, deglaze with milk. Cut ham into small cubes, mix with salt, bell pepper, hot bell pepper, red wine and egg yolks to the sauce. Beat the egg whites until firm and fold into the mixture. Butter a baking dish, pour in the mixture and bake in the preheated oven at medium heat (160°C) for about 50 minutes.
