Cut the blood oranges without peel into small slices and let them drain on a kitchen towel for half an hour. Before serving, sprinkle thickly with sugar finely ground in a mortar. Flame and caramelize with a blowtorch.

Place remaining ingredients in whipping kettle and whip in bain-marie until stiff. Offer with the blood orange slices.
