Instructions:

Stir the uncooled QimiQ until smooth.Add the mascarpone, pumpkin seeds and spices and mix well. Divide the mixture in half and stir the red pesto into one half. Line saddle of venison dish with plastic wrap, pour in red mixture and top with Gorgonzola in small pieces. Spread second mixture on top and cover with plastic wrap. Chill the tureen for at least 4-5 hours. Then turn out, remove plastic wrap, sprinkle with chopped pumpkin seeds if desired, cut into slices.

Cut baguette into thin slices, drizzle with olive oil, sprinkle with pizza spice mix and bake in oven at about 180°C for 2-3 minutes.
