For the curd filling, stir vanilla pudding powder, sugar and semolina with a little milk until smooth. Bring remaining milk to a boil, stir in custard powder mixture and bring to a boil briefly, stirring constantly, then transfer to a larger bowl.

Cool slightly, stirring occasionally (just enough to keep eggs from curdling). Gradually add eggs, raisins and curd and stir until smooth.
