Instructions:

For the curd cheese soufflé with marinated plums, first beat egg yolks with curd cheese and vanilla pulp until creamy.

Beat egg whites with granulated sugar until whipped egg whites form. Carefully fold into the yolk-curd mixture.

Butter small ramekins and sprinkle with granulated sugar. Fill 2/3 full with the curd mixture. Place the molds in a water bath and bake in a preheated oven at 190 °C for 25 minutes.

In the meantime, heat the plums in a pan with sugar and honey, deglaze with port and apple juice. Add star anise and lime juice and simmer for another 2 minutes.

Turn out the casserole from the molds. Arrange curd cheese soufflé with marinated plums, garnish with finely chopped mint and powdered sugar.
