For the chia muffins, pour the plant milk into a sealable bowl and add the chia seeds, spelt oatmeal, flax seeds, raisins, nuts and cinnamon.

Stir the mixture well and let it rest covered in the refrigerator for about 30 minutes. Cut apple into small cubes and pour the juice of one orange over it.

Mash the ripe banana with a fork and add to the apple pieces. Mix dry ingredients (flour, cornflour, baking powder, salt).

Now add honey and oil to the chia mixture, as well as the apple-banana mixture. Mix well. Gradually fold in the dry ingredients.

Divide the dough between muffin cups and bake in a preheated oven at 160 °C convection oven for approx. 30 minutes.
