Cut the peeled bananas in half lengthwise, dividing each half diagonally into two pieces. Roast in hot oil until golden all around. Make sugar with vinegar and water to light caramel. Turn the banana slices one by one in this syrup to the other side and place them one by one on an oiled plate. Pour cold water over them to make the syrup hard. Pour off the water, bring the bananas to the table on the spot.
