Try this delicious pasta dish:

Add the meat to the boiling water, along with the peeled onions cut into coarse slices, the peppercorns, the juniper berries the thyme, the bay leaves and 3-5 cloves.

Simmer for 15 min, then skim and simmer on low heat until lightly cooked in about 2 hours. Take out and rest for 10 min. Then cut the meat into 1/2 cm thick slices and bring to the table. Serve with the cornichons and the silver onions. And do not forget the mustard. The dish could be served with Schupfnudeln (potato noodles) and Kraut (cabbage), but also with farmhouse bread.
