For Petits Fours à la Sacher, first preheat the oven to 180 °C and line a baking tray with baking paper.

Beat the eggs with the sugar until thick and fluffy, then sift the flour with the cocoa and fold in carefully. Spread the batter thinly on the prepared tray and bake for about 10 minutes (on sight).

Let the sponge cake cool on the tray.

Heat jam with rum and water and mix thoroughly. Cut the sponge sheet in half, spread one half thickly with the prepared jam mixture, place the other half on top and press down. Cover and refrigerate.

Melt the chocolate coating. Cut the prepared sponge marmalade slab into cubes, coat them with chocolate glaze and allow to dry slightly. Use the remaining chocolate coating to decorate the Petits Fours à la Sacher, e.g. draw thin threads on them and decorate with chocolate pearls.
