For the banana-chocolate cookies, preheat the oven to 180 °C convection oven. Line 2 baking trays with baking paper. Mash the bananas with a fork and mix with the soft margarine and the soy yogurt.
Combine the flour, sugar, vanilla bean grate, baking soda and salt and mix into the banana mixture. Finally, fold in the chocolate chips.
Using a tablespoon, place small mounds not too close to each other on the baking sheets and bake for about 15 minutes until golden brown.
