For the spelt vegetable rice, chop the carrots and celery. Put in a pot of water (1/2 l) with the spelt rice.
Add vegetable soup seasoning and herb salt as well and cook for 45 minutes. If necessary, add a little more water.
Chop the mushrooms and leek, add to the rice after 30 minutes and cook. Leave to stand for another 10 minutes. Put it in a baking dish, sprinkle with cheese and parsley.
Bake the spelt-vegetable rice in the oven at 200°C for 20-30 minutes.
