Separate eggs and beat with half the sugar until creamy. Beat with the second half of sugar to snow.

Stir the snow into the yolk mixture alternately with the flour. Finally, add the vanilla sugar.

Stir the whole again briefly and spread on a baking sheet lined with baking paper.

Bake in the preheated oven at 180 °C for about 10-15 minutes.

In the meantime, sprinkle a fresh tea towel generously with sugar, turn the baked sponge dough onto it, spread generously with jam, and roll up immediately.

Sprinkle with powdered sugar before serving.
