Mix flour with baking soda and add eggs, sugar and honey. Season with the gingerbread spice and add a little extra cinnamon if desired.

Knead all ingredients well together and let the gingerbread dough rest outside, preferably overnight.
The next day, roll out the dough on a floured work surface and cut out the desired shapes with cookie cutters or a gingerbread model.
Preheat the oven to 170 °C.
Place the figures on a baking tray lined with baking paper and brush with milk. Bake in the oven for about 10 minutes until they have a nice color.
Once the gingerbread has cooled, you can decorate it as you like or glaze it with chocolate.
