Instructions:

Stir the yeast with sugar, lukewarm milk as well as a little flour and leave. Next, add lemon zest, salt, egg, the remaining sugar and alternate lukewarm milk and flour. Stir everything well until a smooth dough is formed. Cover with a napkin and let rise for about 30 minutes. Grease the frying pan with melted fat and fry the small pancakes on both sides until golden brown.

Spread the finished pancakes with jam and sprinkle with curd cheese. The curd can be drizzled with sour whipped cream or garnished with 1 teaspoon of whipped cream.

The same dough can also be used to bake fruit pancakes.

To do this, pour a thin layer of batter into the frying pan, place 1 apple slice on top and pour batter over it again. Also bake these fruit pancakes on both sides until golden brown.
