Finely grind walnuts in a universal grinder. Put vanilla sugar, salt, flour, cinnamon, cocoa, sugar, nuts, egg and fat in flakes into a wide bowl. Knead with the dough hook of the hand mixer to a smooth dough. Then knead again briefly with your hands and chill the dough for about 30 minutes with the lid closed.
Roll out dough thinly on lightly floured surface. Cut out trees with different sized Christmas tree cookie cutters and place on two baking sheets lined with parchment paper.
Place pine nuts on top of the trees, press gently until smooth. Bake one after the other in a heated oven (electric kitchen stove 175 degrees / gas mark 2) for 10-12 minutes. Remove from the oven, place on a wire rack and cool. Dust with powdered sugar.
