Try this delicious cake recipe:

(*) For a baking tray of 26 cm ø.

For the dough, put flour, sugar and salt in a large enough bowl. Add butter in small pieces. Rub everything quickly between your fingers until crumbly. Add egg, knead dough quickly, but only until it holds together. Refrigerate for 1 hour.

Peel the quinces, cut in half, remove the core and fly, cut halves into wedges. Meanwhile, cook with all ingredients until soft, about 30 minutes. Mash the quinces with a fork to a puree. Cool.

Roll out two thirds of the dough and spread it on the baking tray. Spread quince puree evenly on it. Form narrow rolls from the remaining dough and spread them out on the fruit mixture like a lattice, like a Linzertorte. Bake the cake in the oven at 180 °C for 35 minutes.

Whip the cream and pear syrup until fluffy and serve with the cake while it is still warm.
