For the salmon dumplings, dice the salmon, soak the white bread in the whipping cream. Make all ingredients into a smooth puree in a food processor and pass through a sieve.

Use a tablespoon to make dumplings and cook them in boiling salted water.

Serve the salmon gnocchi as a soup garnish!
