For the rice casserole, cook the rice in the milk until soft and let cool. Separate the eggs and beat the egg whites with a pinch of salt until stiff. Cream butter with sugar, almonds and grated lemon zest, stir in yolks one at a time.
Peel, core and quarter the apples and cut into thin slices. Mix the butter mixture including the apple slices with the rice mixture and fold in the snow. Grease a baking dish with butter and sprinkle with breadcrumbs.
Pour in the mixture and bake at 150 °C for about 40 minutes.
