Instructions:

For the Kasknöpf, squeeze the curd cheese in a dish. Mix with nutmeg, salt, pepper, flour and eggs until smooth. Cut out dumplings with two damp teaspoons. After five minutes in boiling tap water, let cool on a dish rack.

Flatten medallions, season with pepper and salt. Sizzle in clarified butter for two minutes on each side, let rest for two minutes.

Steam the cherries in hot butter while swirling. Add both types of wine, stock and cherry brandy and stir a little. Add crème fraîche, bring to boil and season.

Fry the Kasknöpf until golden brown.

Serve medallions, cherries and a little bit of sauce on the plates, offer the remaining cherry sauce and the Kasknöpf for it.
