For the chicken soup, peel and finely chop the onion. For color, the onion peel can be added later and removed after cooking.
Sauté the onion together with the chicken breast and add a little water. skim off the foam and add the remaining water.
Peel and chop the vegetables and add them to the soup. Simmer for about 50 minutes. Add the soup cube and some salt. Chop the parsley and add it as well.
Take the chicken breast out of the soup and remove the meat from the bones and cut it into small pieces. Serve the soup with the meat garnish.
