Mix fat with lemon skin, sugar, salt and egg. Fold in curd cheese and flour. Bake 4 pancakes per unit in turn from the dough in the hot fat.
Clean rhubarb, rinse, cut, boil with sugar and tap water on stove for three minutes. Rinse strawberries, cut in half and mix into the compote.
Serve the compote with the pancakes.
Tip: Instead of clarified butter, you can use butter in most cases.
