For the zucchini and goat cheese pizza, first prepare the dough. For the dough, dissolve the yeast in lukewarm water. Knead into dough with flour, olive oil and salt and let rise in a bowl, covered, for 45 minutes.
Meanwhile, wash zucchini and cut into strips. Grate Parmesan cheese and cut goat cheese into small cubes or crumble (depending on consistency).
Roll out the dough evenly on a greased baking sheet and bake at 200° C convection oven for about 7 minutes. Remove the pizza dough from the oven, spread with paradeis sauce and evenly distribute the zucchini strips on top.
Sprinkle the cheese on top, add a little salt and pepper and continue baking until the zucchini is lightly browned and the cheese is melted (about 8-10 minutes).
For the dressing, chop the basil leaves and mix with lemon juice, olive oil, salt and pepper. Drizzle over the finished pizza and then garnish with arugula.
