For the muesli-apple roll, knead all ingredients into a firm dough and let rise in a warm place for about 30 minutes.
Divide the dough into 15 equal pieces. Form loaves and place on a baking sheet lined with baking paper and brush with skim milk.
Sprinkle with sesame seeds if desired. Cover again and let rise for about 15 minutes.
Before baking, cut loaves 2 or 3 times with a sharp knife.
Place a bowl of water in the oven and bake at 180°C (hot air, do not preheat oven) for about 25 to 30 minutes.
