For the pea soup with frankfurter, finely chop the onion and sauté in butter. Add the peas and sauté briefly. Stir in the flour and fry. Pour in water and simmer gently for about 10 minutes.

Puree the soup with a hand blender and pour through a fine sieve. Stir in milk. Cut frankfurters into slices about 1 cm thick, add to soup and bring to the boil again briefly.

Season to taste with salt, pepper and nutmeg and serve pea soup with frankfurters.
