For the spelt kaiserschmarrn with pear compote, peel and core the pears and cut into wedges. Steam with a little water, cinnamon and 1 tablespoon birch sugar for about 10 minutes to a compote.
Separate the eggs and beat the egg whites to egg whites. Mix egg yolk, milk, salt and spelt flour and add some mineral water. Fold in the beaten egg whites. Heat coconut oil or ghee in a pan and pour in the batter in batches if necessary, depending on the size of the pan.
