For the cream of spinach soup with poached egg, melt the butter in a saucepan. Add the flour and sweat a little. While stirring constantly with a whisk, pour in the soup and whipped cream. Add the spinach.

Season and cook until the spinach is done. Add the garlic and whisk once. Bring water to a boil in a wide container. Add a dash of vinegar.

Crack an egg into a bowl and let it slowly slide into the water. Repeat the process with the other eggs – work quickly.

Continue to simmer briefly (do not boil). Using a dumpling scoop, fish out the eggs and serve together with the soup. Serve the cream of spinach soup with poached egg.
